My younger sister moved in with me for the summer and it’s the first time since college I’ve had a roommate. I’ve had to reassess the amount of stuff I own and that’s been a bit of an adjustment. As in all of my stuff has moved from the second bedroom into messy piles in my bedroom to make space for her stuff.

Other than that, having another person in the house to stay up late with watching New Girl reruns, who encourages me to keep everything I’ve ordered online, and to try new recipes with is a really nice change of pace. We’re having a lot of fun together (or at least I am).

Making meals for myself, more often than not, is a quick task. I have a handful of simple ingredients that I use pretty regularly. Cooking new meals for two people really is the best – no leftovers (yep, that’s a plus in this house) and no ingredients going bad in the fridge waiting to be used again! I still have some simple go-to eats for when we’re not sharing meals and one of my favorites is avocado toast.

There are many people in my life who don’t understand or appreciate the avocado toast. It makes me like them a little less TBH (just kidding, mom). It’s one of my favorite breakfasts/lunches/dinners when I need something quick and filling. There are endless ways to doctor up your avo toast so lack of variety is not an issue. Below are two of the most common ways I like to make mine – one savory and one sweet!

AVOCADO TOAST TWO WAYS

Savory Ingredients
1/4 of an avocado, smashed or sliced
1 piece of gluten free bread (I love Udi’s)
1-2 small radishes, thinly sliced
1 Tbsp feta cheese, crumbled
Sea salt and pepper to taste

Sweet Ingredients
1/4 of an avocado, smashed or sliced
1 piece of gluten free bread (I love Udi’s)
1 small nectarine
Organic honey, drizzled
Handful of walnut pieces
Sea salt to taste

Place your sliced avocado and other ingredients on top of your toasted bread and enjoy. Do you like avocado toast? What are your favorite ingredients to pile on top?

Lemon Dijon Potato Salad via Taste Love and Nourish

It’s almost Memorial Day weekend and I have visions of sunshine and sangria dancing through my head. Do you travel for the holiday or enjoy that extra day at home? I’ve been traveling a lot this spring and am kind of looking forward to a low key, long weekend at home shopping some sales, going to a baseball game, and lots of grilling outside.

I can appreciate all of the obligatory holiday weekend barbecue classics: potato salad, mac and cheese, hot dogs off the grill, yes please. Maybe it’s my age showing, but in life and on the table I like a little bit of balance these days – a few healthier options to accompany the indulgences. Show me the greens!

These recipes prove that fresh, summery salads certainly don’t have to be boring, but can complete a great outdoor party spread. Enjoy your nice long weekend, my American friends!

A few weeks back, I spotted a local farm that had set up shop on the side of the road on my way home from work and decided to pull over to check out the herb selection. I haven’t had fresh herbs at home in a few years and was overly excited about all of the culinary possibilities. I left with several mint plants, a basil plant, rosemary, and cilantro. We’ve got herbs for days at this little condo of mine.

When I was really into juicing a few years ago, I’d go through heaps of mint each week. I love the smell of mint and can’t get enough of it in my drinks. But can we just talk about how hard juicers are to wash for a second? The effort of cleaning the machine outweighs the benefits of juicing for me most days and my juicer has sadly been collecting dust since last summer.

But not today, my friends. I knew with the abundant amount of mint I had on hand that it was only appropriate to put together my favorite (non-alcoholic) refreshing summer beverage – mint cucumber lemonade! I use the term lemonade loosely, as it has no added sugar. It’s a healthier and hydrating version, which is a win-win for me and anyone who prefers infusing flavor into their water.

MINT CUCUMBER LEMONADE

Ingredients
4 lemons, halved and juiced
5 cups water
1 cucumber
2 handfuls of mint, roughly chopped
1 lemon for garnish

Instructions
Combine all of the ingredients in a large pitcher.
Stir well and refrigerate for at least an hour before serving to allow the cucumbers and mint to flavor the drink.
Garnish with slices of cucumber, lemon, and a sprig of mint to serve.
